• 4 ounces pancetta (or bacon)
• 1 pound shrimp (peeled and deveined)
• ½ tsp salt
• ½ tsp black pepper
• 9 ounces brown mushrooms (sliced)
• 2 garlic cloves (minced)
• 1 onion (small, diced)
• ½ tsp dried thyme
• 1 jar (7 ounces/200 g) red pesto
• ¼ cup heavy cream
• 2 tbsp chopped parsley
