Mastodon Peas are easy to harvest, easy to cook, and easy to eat! They're the legume of the Kentucky Coffetree, and one of our favorite wild foods.
Ingredients
- 1 Large Pot
- 1 tbsp minced wild herbs
- 1.5 tbsp olive oil
- 1 cup shelled mastodon peas
- 4 oz burrata
- 1/4 cup young cherry tomatoes, sliced
- flakey salt, for serving
- crostini or pasta, for serving.
