Albondigas - Las Palmas Sauces

• 3 large onions, diced
• 4 tbsp bacon grease
• 28 oz Tomato Enchilada Sauce
• 4 oz Mild Diced Green Chiles
• 1 cup potatoes, diced (optional)
• 1 qt water
• 3 beef boullion cubes
• 1/2 tsp coriander
• 1/4 tsp cumin
• 1 lb lean ground beef
• 1 cup corn chips, crushed
• 1 egg
• 2 clove garlic
