Ingredients

• 2 pounds beef chuck roast – cut into 1-inch cubes
• 2 teaspoons vegetable oil
• 1 cup onion – diced
• 8 ounces button mushrooms – sliced
• 2 teaspoons minced garlic
• 1-12 ounces can dark beer – Guiness
• 8 ounces baby-cut carrots halved lengthwise
• 1 pound red-skinned potatoes – diced
• 1 tablespoon tomato paste
• 1 teaspoon kosher salt
• 1 teaspoon freshly ground black pepper
• 2 teaspoons dried thyme leaves
• 3 cups beef stock
