- 1kg (2lb 4oz) sweet potato, grated
- 200g (7oz) soft brown sugar
- 200g (7oz) plain flour
- 3 tsp ground cinnamon
- 1 tsp grated nutmeg
- 1 tsp salt
- 3 tsp vanilla extract
- 200ml (7fl oz) coconut milk
- 2 large eggs
- single cream, to serve
