Chicken Mafe - Oryana

Ingredients

• 12 cloves garlic, divided
• 1-inch piece of ginger, peeled
• Kosher salt and black pepper
• ½ teaspoon red-pepper flakes, more or less depending on how spicy you like things
• 2 pounds skinless chicken thighs
• 4 tablespoons coconut oil
• 1 medium onion, chopped
• 3 tablespoons fish sauce
• 1 6-oz can tomato paste
• 1 cup creamy unsweetened peanut butter
• ½ pound green cabbage, cut into large chunks
• 3 medium carrots, peeled, cut in 2-inch lengths
• 1 medium sweet potato, peeled, large dice
• 2 medium Yukon Gold potatoes, unpeeled, large dice
• Scotch Bonnet chili slices, to taste (optional)
