Classic Endive Salad - Live Learn Lovewell
Endive makes a comeback this winter with its bitter profile and versatility, making a classic composed salad you'll need this Thanksgiving.
Ingredients
- 3-4 medium-sized endives (roughly 10 oz)
- 1 Bartlett pear, ripened
- 1 clove garlic, minced
- 1 tbsp Dijon mustard
- 1/4 cup fruity vinegar (I’ve been loving this crushed tangerine one)
- 1/2 cup extra virgin olive oil
- 1/2 cup walnuts, toasted
- 1/3 cup Gorgonzola
- Rinse endive. Cut the bottom stalk and gently peel off each leaf.
- Cube pear. Set aside.
- In a big mixing bowl, combine garlic, Dijon mustard, vinegar, and olive oil together. Whisk until smooth.
- In the same bowl, add endive, pear, walnuts and mix gently.
- Plate and sprinkle Gorgonzola on top. (If you’re like me, you’ll strategically place a piece in each endive boat.) Enjoy!
