Ingredients

  • 3-4 medium-sized endives (roughly 10 oz)
  • 1 Bartlett pear, ripened
  • 1 clove garlic, minced
  • 1 tbsp Dijon mustard
  • 1/4 cup fruity vinegar (I’ve been loving this crushed tangerine one)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup walnuts, toasted
  • 1/3 cup Gorgonzola
  • Rinse endive. Cut the bottom stalk and gently peel off each leaf.
  • Cube pear. Set aside.
  • In a big mixing bowl, combine garlic, Dijon mustard, vinegar, and olive oil together. Whisk until smooth.
  • In the same bowl, add endive, pear, walnuts and mix gently.
  • Plate and sprinkle Gorgonzola on top. (If you’re like me, you’ll strategically place a piece in each endive boat.) Enjoy!
