- 500 g white Flour (best if sifted)
- 300 g sugar
- 2 tbsp butter (at room temperature)
- 2 tbsp Extra Virgin Olive Oil
- 1 lemon (only the grated yellow peel)
- 3 eggs
- 1 glass milk (approx. 200 ml)
- 50 g pine nuts
- 50 g raisins
- ½ glass Vin Santo (approx. 100 ml)
- 1 sachet baking powder (sufficient for 500g of flour)
- 1 pinch salt
- 500 g sheep’s milk ricotta
- 100 g Wildflower Honey
- 70 g icing sugar
- cinnamon (according to taste)
