Street Corn Salad

Ingredients

• 1 lb ButcherBox.ca extra lean ground turkey
• 1 small sweet red pepper, diced
• 2 tbsp pre made olive tapenade - or diced green, black and Kalamata olives mixed with garlic and olive oil
• 1/2 cup frozen corn niblets
• 1 tsp tomato paste (or ancho chipotle paste)
• 2 tbsp black beans, drained and rinsed
• 1 bag pre cut salad mix of your choosing (the crunchier the better - such as coleslaw)
• 1 lime - zested and juiced
• 1 avocado, diced
• for garnish lime & cilantro drizzle - pre made is fine
• to taste Monterey Jack cheese, shredded (or cheese of your choosing)
