• 1 whole chicken
• 2 tablespoons olive oil or softened butter
• 1 tablespoon kosher salt
• 1 teaspoon freshly ground black pepper
• 1 lemon, halved
• 1 garlic bulb, halved horizontally
• 3 sprigs 3–4 of fresh herbs
• 1 onion, quartered
