Ingredients

• 3 tbsp olive oil
• 1 large onion, chopped
• 2 carrots, peeled and chopped
• 2 celery stalks, chopped
• Salt and black pepper
• 4 garlic cloves, crushed
• 950 ml chicken stock
• 200-250 g leftover cooked chicken, shredded
• 1 tbsp fresh rosemary leaves, finely chopped
• 1 x 500 g pack of fresh gnocchi
• 140 g baby spinach
• 300 ml cream
