• 3 tbsp onion (minced)
• 3 cloves garlic (minced)
• 1 jalapeno (seeded and minced)
• 1-2 tbsp chipotle peppers in adobo (chopped)
• 1 3/4 cup half and half
• 1 tbsp cornstarch
• 4 oz cream cheese (cut in cubes, softened)
• 2 tsp ground mustard
• 1/8 tsp ground paprika
• 1/8 tsp ground coriander
• black pepper (pinch)
• 8 oz mild cheddar (shredded)
• 4 oz white cheddar cheese (shredded)
