Ingredients

• 500g Otway Pork sausages, casings removed
• 1 ½ tablespoons olive oil
• 1 large red onion, finely chopped
• 3 garlic cloves, finely chopped
• 2 sticks celery, thinly sliced
• 2 medium carrots, diced
• 2 x 400g cans peeled whole tomatoes
• 3 cups chicken stock
• 3 bay leaves
• ½ teaspoon sugar
• 1/3 cup flat-leaf parsley leaves, chopped
• Crusty bread, to serve
