Coconut Corn Cakes

Ingredients

• 1 cup Fresh Sweet Corn (Corn Cut from 2 ears of corn)
• 1/4 cup Chives, Garlic Chives, or small green onions, chopped
• 2 Eggs
• 2 tbsp Virgin Coconut Oil, Melted
• 1/4 cup Coconut Flour
• 1/4 cup Corn Masa Flour (or fine cornmeal)
• 1/2 tsp Salt
• 1/4 tsp Black Pepper
• 2 tbsp Olive Oil, Coconut Oil, or Butter
