David's Cinnamon Swirls recipe - The Great British Bake Off
These super-sticky, cinnamon-packed buns are well worth making as a special treat to serve with a cup of strong coffee, the buttercream guilds the lily but the buns are just as nice without it.
Ingredients
- 15g instant yeast
- 500g strong white bread flour
- 30g light brown soft sugar
- 1 tsp salt
- 80g finely grated carrot
- 1 tsp ground cardamom
- finely grated zest of 2 unwaxed lemons
- 40g unsalted butter, softened
- 75g unsalted butter
- 75g light brown soft sugar
- 75g caster sugar
- 10g ground cinnamon
- 100g raisins
- 2 tbsp brandy
- 40g caster sugar
- ½ tsp malt extract
- 1 tsp ground cinnamon
- 150g icing sugar
- 1 tsp malt extract
- 1 tsp vanilla paste
