Ingredients

• 2 tablespoons olive oil
• 1 cup chopped onions
• 1 teaspoon salt
• 4 large garlic cloves, minced (about 3 tablespoons)
• ¼ cup chili powder
• 3 tablespoons cumin
• 1 teaspoon crushed red pepper flakes
• 3 cups cubed sweet potatoes
• 1 (32 ounce) can diced tomatoes
• 3 cups corn kernels
• 2 (15 ounce) cans black beans, rinsed and drained
• ½ cup lime juice
• ¼ cup real maple syrup
• 1 jalapeño pepper, seeded and minced
• 1 cup vegetable stock, depending on desired consistency
