  • 4 oz Mushrooms, shiitake, sliced (look for pre-sliced to save time)
  • 3 oz Bamboo shoots, canned, sliced into thin strips
  • 2 Eggs, whisked
  • 2 stalks Green onions, chopped, green and white parts combined
  • 1 Tbsp Oil, toasted sesame
  • 5 cups Stock, any type
  • 3 Tbsp Soy sauce, low-sodium
  • 1 Tbsp Vinegar, rice
  • 1/2 tsp Sugar (opt)
  • 1/4 tsp Ground white pepper (sub black pepper)
  • 1/4 tsp Red pepper flakes
  • 2 Tbsp Cornstarch
  • 3 Tbsp Water
  • 2 tsp Lemon juice
  • 1 cup Frozen vegetables, any mix (look for frozen peas and carrots or a stir-fry mix)
  • 1 Tbsp Oil, cooking
  • ~1 1/2 cups Cooked rice (leftover from Monday)
  • 1 Tbsp Soy sauce, low-sodium
  • 2 tsp Vinegar, rice
