  • 1 parmesan cheese rind, optional
  • 1/2 teaspoon kosher salt, plus more, to taste
  • 1/2 teaspoon fresh black pepper, plus more, to taste
  • 1 fresh rosemary sprig
  • 2 bay leaves
  • 2 tablespoons fresh basil, chopped
  • 1/4 cup fresh Italian parsley, chopped
  • 1 medium zucchini, diced
  • 2 cups frozen spinach, defrosted and chopped
  • 2 cups small pasta such as ditalini, cooked
