Nana’s lemon meringue pie
Nici Wickes pleaded with her mum to resurrect this favourite from her childhood - her nana's beloved lemon meringue pie recipe. Serve cool or warm with whipped cream - it's too delicious to miss!
Ingredients
- 1-2 sheets sweet shortcrust pastry
- 1/4 cup cornflour, plus 1 tbsp extra
- 3/4 cup sugar
- 1/2 cup lemon juice
- zest of 2-3 lemons
- 3/4 cup water
- 3 eggs, separated
- 1 tablespoon butter
- 1/4 cup caster sugar
- whipped cream, to serve
