- 3 eggs yolks (whites reserved for meringue)
- 1/3 cup fresh lemon juice
- 2 tablespoons butter
- 1/2 teaspoon grated lemon rind (optional)
- *MERINGUE*
- 3 egg whites
- 3 tablespoons ice water
- 1 teaspoon baking powder
- 6 tablespoons granulated sugar
