Ingredients

• 10 g rosemary
• 10 g thyme
• 1 bay leaf
• 1 leek leaf (see PREPARATION below)
• 380 g yellow onion (thinly sliced)
• 380 g red onion (thinly sliced)
• 25 g garlic (minced)
• 50 mL olive oil
• 1½ tbsp kosher salt
• 130 mL port wine
• 40 mL balsamic vinegar
• 150 mL dry red wine
• 1 L beef stock
• 1 L water
• pinch ground black pepper
• 1 loaf of crusty bread (sliced)
• 250 g Gruyère and/or Swiss cheese (sliced)
