• 1 Tbsp olive oil
• 1 leek, sliced (green and white parts)
• 4 cloves garlic, minced
• 1 carrot, diced
• 1 tsp fresh thyme
• ½ tsp salt
• ¼ tsp freshly ground pepper
• 2 cups yellow split peas
• 2 quarts (8 cups) vegetable stock
• 4 cups baby spinach
