Mini Lemon Cheesecake: These individual sized cheesecakes are perfect for baby showers, bridal showers, parties and more!
Ingredients
- Graham Cracker Crust:
- ¾ C graham cracker crumbs
- 1 ½ tbsp sugar
- ¼ C unsalted butter, melted
- Cheesecake Filling:
- 2 - 8oz cream cheese, softened
- 1 C sugar
- ½ C sour cream
- ¾ tsp pure vanilla extract
- ⅛ tsp kosher salt
- 2 large eggs
- 2 large lemons, zested
- Whipped Cream Topping:
- 1 cup Heavy Cream
- 1 T. Confectioners Sugar.
