• 1 cup onion, diced
• 1/2 cup celery, diced
• 1 cup carrots, diced
• 1/4 cup white wine
• 1/4 cup parsley chopped
• 1/4 cup fresh chives, chopped
• 1 teaspoon Louisiana-style red pepper sauce
