Ingredients

  • 6 oz Rice vermicelli noodles ((Find these thin rice noodles in the ethnic aisle. If you can't find them, substitute with another thin noodle.))
  • 1/2 Rotisserie chicken, shredded
  • 1/2 lb Carrots, grated
  • 2/3 lb Cucumbers, sliced into matchsticks
  • 1/4 head Iceberg lettuce, sliced
  • 16 sheets Rice papers ((You will probably make about 4 to 6 / person. Look for them in the ethnic aisle.))
  • 1/2 cup Homemade peanut sauce ((Ingredients listed separately))
  • 3 Tbsp Peanut butter ((Creamy is preferred, but crunchy will also work))
  • 2 1/2 Tbsp Soy sauce, low-sodium
  • 1 1/2 Tbsp Rice vinegar
  • 1 1/2 Tbsp Honey
  • 2 tsp Cooking oil
  • 2 tsp Sriracha (or other hot sauce) ((Start off with less or omit for less heat))
  • 1 Lime, juice of
