Honey Mustard Roast Leg of Pork

Ingredients

• 2.5 kg leg of pork, skin scored
• 2 onions, quartered
• 2 carrots, roughly chopped
• 4 cloves garlic, crushed
• 2 tbsp olive oil
• 2 tsp salt
• 1 tsp black pepper
• 4 tbsp honey
• 3 tbsp wholegrain mustard
• 2 tbsp brown sugar
• 1 tbsp soy sauce
• 2 cloves garlic, crushed
• 2 tbsp flour
• 500 ml chicken stock
• Salt and pepper to taste
• 1 kg potatoes, peeled and quartered
• 500 g butternut, cut into chunks
• 3 onions, cut into wedges
• 3 tbsp olive oil
• 1 tsp dried mixed herbs
