Ingredients

• 1 small seedless watermelon, cut into bite-size pieces
• 1/2 red onion, finely chopped
• 1 small red bell pepper, very finely chopped
• 1 red Fresno chile, very thinly sliced
• 1 serrano chile, very thinly sliced
• About 1/4 cup EVOO
• Juice of 2 limes
• Salt and pepper
• 1/4 cup fresh mint leaves, chopped
• 1/2 cup fresh flat-leaf or curly parsley leaves, chopped
