Mushroom Barley Soup – Bar Belles At Home

Ingredients

• 1 tablespoon olive oil
• 1 large onion, chopped
• 3 cloves of fresh garlic, minced
• 2 teaspoons dried marjoram
• 1 teaspoon dried rosemary
• 8 cups vegetable broth or beef broth, low sodium
• 1 1/4 cups uncooked barley (i used the pearl barley)
• 1 carton of sliced baby bella mushrooms
• 1 carton small button mushrooms, whole
• 2 large carrots, diced
• 1 bay leaf
• Salt and black pepper
• 1 cup milk (used skim)
