Peanut Butter Confetti Cookies – Roses & Whiskers

Ingredients

• 2 1/4 cups gluten free 1-to-1 baking flour (or substitute all-purpose flour for gluten-full cookies)
• 1 tsp baking soda
• 1 cup unsalted butter (softened to room temperature)
• 1 cup creamy peanut butter
• 1/2 cup packed light brown sugar
• 1/2 cup granulated sugar
• 3.4 oz. instant vanilla pudding mix ((check labels to be sure no gluten ingredients))
• 2 large eggs (room temperature)
• 1 large egg yolk (room temperature)
• 2 tsp vanilla extract
• 1/4 tsp maple extract
• 1/4 cup jimmies
