Ingredients

• 3 oz (85 g) white chocolate, chopped
• 1 cup (250 ml) sugar
• 3 tablespoons (45 ml) unbleached all-purpose flour
• 3 tablespoons (45 ml) cornstarch
• 3 eggs
• 2 cups (500 ml) milk, warm
• 1 teaspoon (5 ml) vanilla extract
• 2 sheets 200 g rolled out puff pastry, thawed
• 1 tablespoon (15 ml) sugar
• 1 1/2 cups (375 ml) quartered fresh strawberries (or raspberries)
• 1 1/4 cups (310 ml) 35% cream
• 1/4 cup (60 ml) sugar
• 1/2 teaspoon (2.5 ml) vanilla extract
• 1/4 cup (60 ml) icing sugar
• 1 teaspoon (5 ml) of water
• 1/2 cup (125 ml) seedless strawberry jam, at room temperature (or raspberry jam)
