Festive Pulled Duck Wreath Recipe · Gressingham

Ingredients

• 1 whole Gressingham duck
• ½ pint cider
• ¼ pint cider vinegar
• 1 bulb garlic, broken into cloves then crushed.
• A selection of salad leaves
• 1 pomegranate – seeds removed
• 1 small bunch of red grapes
• Handful of dried whole cranberries
• 1 tsp ground cumin
• 4 tsp smoked paprika
• 1 tsp ground coriander
• 1 tsp ground allspice
• ½ tsp chilli powder
• 1 tsp ground black/white pepper
• 2 tsp salt
• 1 ½ tbsp brown sugar
• 2 tbsp whole grain mustard
