This lighter version of favorite Greek yogurt dressing is packed with texture and flavor. Red beans have a great taste and slightly chewy, which bring layer of sweet and sour to dish.

Ingredients

  • Top with diced ham, if you’d like.
  • Try topping with tomatoes and small broccoli florets, diced bell peppers.
  • Stir-Fry Veggies: Select sliced onions and bell peppers, baby corn, and mushrooms, just cook the protein you want and throw in the already prepped veggies and stir in the dressing.
  • Cole Slaw: Choose two colors of shredded lettuce, shredded carrots, and onions. Top with a mild dressing and herb. Toss when you get home.
  • Egg Salad: Combine diced hard-boiled eggs, bacon, green onions, and other add ingredients. Add a creamy dressing and toss it, then serve it up.
  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • pepper to taste
  • ½ cup Greek yogurt
  • 1 teaspoon honey
  • 1 tablespoon minced fresh parsley
  • In a medium bowl, combine the olive oil, lime juice, and honey.

  • Sprinkle in the salt, pepper, and minced parsley.
  • Stir in until combined and set aside.
  • One 15-oz. caned red beans, rinsed and drained.
  • 1 medium avocado, helved, seeded, peeled, and chopped.
  • ½ cup cooked corn kernels
  • In a large bowl, place the red beans and corn kernels mix together.
  • Topping with avocado
  • Drizzle some dressing all over the top.
  • Then serve it up with a little extra dressing on the side.
