Ingredients

  • 600 gr flour
  • 150 gr butter
  • 3 spoons of full fat Greek yogurt
  • 1/2 teaspoons of salt
  • one orange juice (about 6 spoons of juice)
  • 1-2 teaspoons of water
  • 1/2 teaspoons of baking soda
  • 1 glass of red wine
  • salt, pepper to your taste
  • 100 gr grated gruyer cheese
  • 200 gr gorgonzola cremoso
  • 2 pears
  • 2 bigger red onions
  • 20 gr butter
  • First you need to make the dough. Mix together flour, salt, baking soda and add cold butter cut into cubes in the mixture. Knead it with hands until the butter mixes with flour partially.
  • Then add Greek yogurt, orange juice and use a mixer. Add water gradually if the dough is too dry.
  • Dough has to be wet, but not sticky. It should be formed into a ball.
  • Once you form the dough into a ball, wrap it with a transparent foil and leave in the fridge to cool down.
  • In the meantime slice the onion into thin half moons and simmer on butter for 50 minutes with occasional stirring until the onion caramelizes. Add a bit of salt and pepper to your taste.
  • Near the end of simmering add wine and continue with simmering for about 7 minutes more. After that leave aside.
  • Grate the gruyer cheese, chop into small pieces gorgonzola cremoso, wash and slice the pears.
  • Chop pecan walnuts with a knife.
  • After 2 hours in the fridge take out the dough and roll it out between two baking papers, and then fill the central part leaving at least 2.5 cm on the side without filling.
  • A layer of grated gruyer cheese, then a layer of onion, a bit of pepper, then slices of pears, and on top gorgonzola cremoso, and then chopped pecan walnuts.
  • Then partially fold the dough edges over the filling (see pictures), brush them with an egg and put grated gruyer cheese around the edges.
  • Bake in the oven at 180°C for about 40 minutes.
  • Once baked, leave it to cool down for 5 minutes, and then serve.
