Ingredients

• 1/2 cup of bacon renderings, or olive oil
• 1/2 lb of sweet Italian sausage in casing
• 1/2 lb of sweet Italian sausage with casing removed and crumbled
• 3 garlic cloves, minced
• 1 teaspoon salt
• 1 teaspoon pepper
• 1/2 teaspoon dried oregano
• 1/2 cup fresh basil chiffonade, reserve some for garnish
• 2 tablespoons tomato paste
• 1 cup Marsala wine
• 1 (15oz) can tomato sauce
• 1/4 teaspoon red pepper flakes (optional)
• Parmesan for garnish
• 1 lb. of tortellinis or your favorite pasta
