Summers Creamy Sweetcorn, Courgette & Chard Soup Recipe

Ingredients

• 4 sweetcorn cobs, husks removed
• Few sprigs of fresh thyme
• 5 stalks of parsley
• 2 bay leaves
• 4 tbsp bouillon powder
• 1.5 litres water
• 2 tbsp olive oil
• 1 onion, chopped
• 800g courgette, chopped
• 180g chard, stalks and leaves chopped
• 160ml coconut cream
• 1/2 tsp cayenne pepper
• Juice from 1 lime
