Country Pork Stew

Ingredients

• 2 tablespoon olive oil
• 2 pounds lean pork cut into �" to 1" cubes
• 1 large onion, chopped
• 4 medium carrots, sliced
• 3 tablespoons chopped fresh sage or 1 tablespoon rubbed sage
• 1 small can green chiles
• � Cup dry white wine
• 4 cloves garlic, minced
• 2-15oz cans chicken broth (or ~ 4 cups homemade stock)
• 1 teaspoon chipotle (optional)
• 1 teaspoon salt
• 1 tablespoon black pepper
• � Cup corn starch mixed with a little water
• � Cup low fat sour cream
