Ingredients

• 1/4 cup olive oil
• 3 medium onions, sliced
• 3 mixed colored bell peppers, julienned
• 3 cups white mushrooms, cleaned and quartered
• 6 large ripe tomatoes, diced
• 2 tbsp tomato paste
• 2 cups tomato juice
• 3 tbsp chopped garlic
• 1/8 cup fresh basil leaves, chopped
• 1/8 cup fresh parsley leaves, chopped
• salt and pepper
• 12 (4 oz) boneless chicken thighs or breasts (pre-grilled)
• 1 large onion, chopped
• 6 tbsp butter
• 8 cups water
• 2 cups yellow cornmeal
• Grated parmesan
