Ingredients

• 6 chicken thighs, boneless, cut into bite size pieces
• 1 tbsp Big Cove Foods Sunshine Blend
• 2 tbsp olive oil
• 1 onion, diced
• 3 garlic cloves, roughly minced
• 1.5 lb potato gnocchi (about 4 cups)
• 2-3 big handfuls of fresh spinach
• 1.5 cups chicken broth
• 1/2 cup heavy cream
• 1/4 cup Parmesan
• Salt to taste
