Yoghurt and Garlic Sauce from Nevin Halici's Turkish Cookbook by Nevin Halici
Put the yoghurt in a bowl. Peel the garlic, and pound it with salt in a mortar until you have a smooth paste. Stir it into the yoghurt and use as required.

- 500 g/1 lb thick-set yoghurt
- salt to taste
- 3 cloves garlic (or according to taste)
