• 2 cups shredded zucchini (from about 1 medium zucchini)
• 1 tablespoon grated lemon zest
• 2 cups all-purpose flour
• 2 teaspoons baking soda
• 1 teaspoon baking powder
• 1 teaspoon fine salt
• 1 teaspoon ground cinnamon
