• 1/2 cup olive oil
• 1 1/2 cups shredded Fontina cheese
• 1 1/2 cups shredded smoked Gouda cheese
• 1/2 small red sweet onion, very thinly sliced and separated into rings
• 1/4 cup chopped fresh cilantro
