• 1 tsp sherry vinegar (or balsamic vinegar)
• ⅓ cup beef stock (or chicken stock, see notes)
• 1 tbsp Dijon mustard
• 1 cup shredded Gruyère
• ¼ cup shredded parmesan
• 1 tbsp fresh thyme leaves (finely chopped)
