• sautéed fennel
• 2 tbsp olive oil
• 1 small onion , finely chopped
• 1 small carrot , diced
• 1 clove garlic , minced
• 2 small bulbs fennel , thinly sliced (4 cups)
• 1 tbsp chopped fresh parsley
• 1 bay leaf
• 0.25 cup dry white wine
