Ingredients

• 2 tablespoons butter, softened, plus more, to taste, for greasing the baking dish
• 1 yellow onion, chopped
• 3 cups ham, cooked and diced
• 1 1/2 cups half-and-half
• 1 1/2 cups heavy cream
• 1/4 cup flour
• black pepper, to taste
• 1 cup cheddar cheese, grated
• 1 cup Monterey Jack cheese, grated
• 3 pounds russet or Yukon Gold potatoes, thoroughly washed and sliced 1/8-inch-thick
• parsley, to taste, chopped, for garnish
