Cacciatore Style Pasta Sauce

Ingredients

• 1 large carrot, diced
• 1 large stick of celery, diced
• 1 large yellow onion, or 2 small, diced
• 1 heaping tablespoon diced garlic
• 1 roasted red bell pepper, chopped
• ¼ lbs of baby bella mushrooms, chopped
• ¼ cup of whole castelvetrano olives, then chopped
• 1 can diced tomatoes
• 2 tbs tomato paste
• 2 cups Chicken stock
• ½ lbs of shredded chicken
