• 3 large white potatoes (about 600g), peeled and diced
• 2 large white leeks, white parts only, cleaned and sliced
• 1 small white onion, peeled and chopped
• 1 litre gluten-free vegetable stock
• 250 ml lactose-free cream or coconut cream
• 2 tablespoons olive oil
• Salt to taste
• White pepper to taste
• Fresh chives for garnish (optional)
