An easy stew with lamb and new potatoes
Ingredients
- 1kg diced lamb shoulder
- 3 tbsp olive oil
- 5 leeks, thinly sliced
- 4 garlic cloves, chopped
- 3 preserved lemons, chopped
- 1 tbsp capers, chopped
- 2 tbsp chopped oregano (fresh or dried)
- 600ml chicken stock
- 750g new potatoes, halved or quartered if large
- 1 x 28g packet flat-leaf parsley, chopped
