Ingredients

• 1 pkg Italpasta Spaghetti
• 2 tbsp extra virgin olive oil
• 2 tbsp tomato paste
• 1 can diced tomatoes
• 1 shallot / small onion (finely chopped)
• 1 carrot(s) (finely chopped)
• 1 stalk celery stalk (finely chopped)
• 1/2 cup fennel (finely chopped)
• 2 clove garlic (minced)
• 1 lb mixed mushrooms (chopped)
• 1 tbsp dried Italian seasoning
• 1/2 tsp salt
• 1/4 tsp pepper (freshly ground)
• 1/4 cup red wine
• 1/2 cup chicken or vegetable broth (no salt added)
• 1 can brown lentils (rinsed, drained)
• 2 bay leaves
• 1/4 cup fresh parsley (chopped)
• 1/3 cup Parmesan Cheese (shaved)
