Purple Sweet Potato Pie

Ingredients

• ⅔ cup light brown sugar
• 1 teaspoon vanilla extract
• 1 ¼ pounds purple sweet potatoes, scrubbed
• 8 tablespoons cold unsalted butter, cut into 1/2-inch cubes
• ¾ cup whole-wheat pastry flour
• ½ cup all-purpose flour
• 1 can low-fat evaporated milk
• ½ teaspoon salt
• ½ teaspoon ground nutmeg
• ¼ teaspoon ground allspice
• 2 tablespoons brandy
• 3 tablespoons 3 to 4 tablespoons ice water
• 3 eaches large eggs
• 3 tablespoons melted butter, cooled
