Smoky Winter Stew - Ziggys

Ingredients

• 500g Middle Bacon , diced
• 1 onion, diced
• 3 large carrots, diced
• 3 celery stalks, diced
• 1/2 tsp salt
• 1/2 tsp pepper
• 5 cloves garlic, minced
• 2 tbsp tomato paste
• 1/2 cup plain flour
• 8 cups chicken stock
• 3 x 400g tins of cannellini beans, drained
• 1 bay leaf
• 4 cups chopped English spinach or kale
